Last Month we made the Lime Leaf, Yogurt and Lime Marinated Chicken recipe from the Food and Drink Magazine. It was delicious.
First I got our all the ingredients necessary. Thankfully I had lime leaves in the freezer from an asian grocer in southern ontario.
I had thawed the chicken over night so that I could cut it into parts. It was still a little frozen which made it easier to break down.
I broke the chicken down into parts
I combined the marinade ingredients as instructed in the recipe. If I do this again, I will blend the ingredients longer to make it more of a pure rather than chunky.
Then to the grill. Not over direct heat.
In the end, doing this over in-direct heat took 1.5 hours on our BBQ which was longer than expected but worth the wait.
Then we served it up with coconut rice, and asian coleslaw. it was delicious.
